Double-Smoked-Ham-cooked-on-the-Smoker

 

While ham on its own is yummy, can you imagine double smoked ham?!


The Meat

Smoked Ham (Typically sold already smoked)


THE RUB

½ cup Brown Sugar
½ cup Natural Sugar in the Raw (Turbinado Sugar)
½ tsp Ground Ginger
½ tsp Cinnamon
½ tsp Fresh Ground Nutmeg
½ tsp Spanish Paprika

THE GLAZE

½ cup Orange Juice
½ cup Apple Juice
¼ cup Brown Sugar
¼ cup Honey


STEPS

  1. Set the smoker to 275 - Add fruity woods
  2. Make the Glaze, together over Med. High heat until it reaches a low boil. Reduce the mixture for 3-5 minutes stirring occasionally. Brush all over the ham
  3. Then shake the sugar blend all over the ham check every hour, if it looks dry add more glaze Internal temp of 140
  4. Take the ham out and lovely tent with foil for a short time
